Shito is a dark brown traditional hot pepper sauce from Ghana, West Africa. It is a unique blend of dried fish, ginger, garlic, onions, shrimp powder, and hot peppers, which are cooked slowly to create a thick, rich, and spicy Shito sauce.

The hot sauce is made using a combination of smoked fish, which gives it a deep umami flavor, and a variety of hot peppers, including Scotch Bonnet and Bird’s Eye, which add heat and complexity. Other key ingredients include vegetable oil or rapeseed oil, onion, garlic, ginger, and chilli powder, which provide a sweet and savoury flavour profile that balances the heat of the peppers.

This so called Kpakpo Shito is commonly used as a condiment to accompany a variety of dishes (you can use in your own recipe) especially Ghanaian cuisine, with tomato puree, including grilled meat, fish sauce, vegetables, and rice dishes. This hot pepper sauce can also be used as a marinade for both fish and meat, or as a flavoring for stews and soups. Like most dishes in Ghana, it is often served with banku, a traditional fermented corn and cassava dough, and grilled tilapia fish
